times like these

I've been trying to write down my thoughts and opinions more than normal. I don't know how to write blogs, I've never kept a journal before in my life. I can never manage to keep up with them, but I always start one with only the best of intentions. I never know where to start, I have so much going on in my mind all the time. I would never be able to keep track of everything. It seems as though every thought should have a category of which it can be talked about, but sometimes I am just too scatter-brained to to lay them all out. I wish you could analyze my brain as it is, I wish people could read each others minds. I wish you could see through the walls people build. I can see through them, but seeing the answers on the other side are always the hardest part.

Right now, I am everywhere. Maybe its just because I've had four beers, about to be five. But who really knows, as long as I've known myself, the last few years I've really KNOWN myself.

Hopefully the more I write the more will make sense, the more I write the more it will make me want to write.

This is getting a bit redic, I feel as though  I should end this abruptly.

not another kitty post

     Sometimes, I feel like people don't understand what I'm trying to get at, like I cant figure out all the correct words to use to help so they ask me questions and I give them snippets of information but all the pieces don't seem to fit the puzzle. Then I'm left worrying if they understood what I was trying to say or just received all the information in the wrong order.


    Often times I wish people could just see into my mind, and see what a thought process for me is like. Its hard to explain. If I am telling a story and something comes up that I don't remember, I try to figure it out right then. So it can be stored away in my mind in remembrance. I've been called out on it a few times, but I cant tell if your joking or not.


    I feel like its like a filing cabinet, and I search through all the files so quick. Pulling information from here and there, muttering to myself to figure it all out.to try 


       I don't think talking to yourself is that weird.




             I'm trying to get better at this whole 'blogging regularly' thing. Let's see how well this goes.

Kitty Star?

So, i'm in love with my kitty. she's the cutest little thing ever! She's only 4/5 and she looks like she could still be a kitten!


It seems as though I have about as many pictures of her as I do of myself. Hmm

Father's Day Pie?

Pie? Did someone say we have pie!?
A very good friend of mine and I,  our dad's are absolutely obsessed with pie, so a while back we had a great idea to make them pie for fathers day. She came over early and thats just what we did. They taste fantastic, doesn't have a whole lot of sugar so you can actually get the full flavor of the fruit. I found the filling recipe HERE and I just used a pie crust recipe from a cook book. I substituted the raspberries for the blackberries, they grow wild near my house so there are tons in the freezer. This recipe is best with fresh picked fruit, but you can use frozen instead.


I got the pie crust recipe from here: 

Its a very easy recipe to make, when it asks for cold water....make sure it is COLD 

The crust!
1 1/3 cups flour
1/4 teaspoon salt
1/3 cup Canola Oil
3 tablespoons ice cold water

Combine flour and salt in small bowl. Combine oil and water. Add to flour. Stir with fork until mixed. If this is somewhat dry, you will have to use your hands to form into a ball. On a lightly floured surface, roll into a circle 1-inch larger than inverted pie pan. Fold over rolling pin and place in pan. Press to fit, folding edges under to form a rim. If a baked crust is desired, prick all over with a fork and bake at 450 degrees Fahrenheit for 12 to 14 minutes or until lightly browned (cooking time may vary according to type of pan used and your oven). Let cool.

I made the dough, split it into two separate chunks and rolled it out using floured wax paper. The crust is super flaky and delicious complements the sweet pie very nicely.  




Then I put one crust in a pie pan and start to form it into the bottom evenly



I then fallowed the recipe for the filling HERE and let the fruit sit together and soak each others flavors up for about 15-30 minutes.



I didn't snap a photo but I filled the crust with the filling (I doubled the recipe) and put the other half of the crust mix on top. I repeated the steps for making the bottom crust of the pie


You can be all fancy if you like, but i just pushed down the edges with a fork and tried to make sure that all the holes were covered

The juices seeped out a bit




The finished product, sensational.
The filling is so delicious, there is very little sugar so its not too sweet. The crust has a bit of salt in it that makes in very complimentary to the filling. This was super easy and so very good. Especially still warm with vanilla ice cream, mmmmmm :)

Cinnamon would also be delicious in the crust, just might need a bit more water.
